Multiple program instances
Does the new version of the program allow for multiple projects to be run at the same time. I can't locate that selection that allowed this in past versions.

The multiple instances option was removed in one of the recent versions. It happened because of the built-in Chromium. In version 120+, Chromium will not allow starting several processes that use the same Chromium "data folder". Generally speaking, it was never recommended, but at least before version 120, Chromium did not crash immediately after detecting a second instance. Now it does. And it won't allow "the rest of the program" to start.
I know this is a problem and many users were running several instances of the program very often. So, in EPF 4.x there will be a way to run several projects simultaneously in one program instance. Currently, there is no ETA for EPF 4.x release. It's in the early design stage right now.

The built-in help file still references the "Allow multiple program instances" option. Would make sense to either remove that section or explain why the feature is no longer present.
