Log is already a text file. You can find the information about project files in the project properties, the "Project files" section.

Plus, you can use menu command [ View -> Export file list... ]

if i uninstall the apps and next time i install again can load project file again?
I previously saved in another folder & get back to EPF folder again ?

It's better to save the entire "Data folder" with all files and sub-folders... And yes, you'll have all your projects back.
