I really really have to figure out how to create these templates on my own. Are thee any advanced tutorials available?

You don't even need a template for most of them. For example, any gallery on www.erocurves.com can be downloaded using the built-in generic template "Download all images from a single-page gallery" which is basically a project with all default settings except for the "Exploration depth" which is set to "Current page only"...

I'll see what can be done with the model and category settings here later...

Oops.. sorry. I thought I had tried the generic settings but it hadn't worked. I will try again.
